Pitta-Balancing Watermelon Salad

Watermelon reduces inflammation and helps to balance out the acidity that can flare up during pitta season. Packed with nutrients and antioxidants, this delicious and refreshing fruit has tons of potassium, magnesium, and vitamins A and C. These micronutrients are essential for heart health and bone health. Plus, watermelon is a super delicious way to stay hydrated and energized.

Ingredients:
1 watermelon (approx. 5-7 lbs)
Juice of two limes
¼ cup olive oil
4 tbs. mint ribboned, chopped or full leaves (or basil)
4 mint sprigs for garnish
4 oz. feta (or goat cheese)
Instructions:
Cut watermelon into cubes. Place in a large salad bowl. Add the chopped mint and crumbled cheese. Drizzle oil and lime juice over the top. Toss the salad, so the mint, cheese, and dressing are distributed evenly.
Portion the salad into four bowls and top with mint leaves
Enjoy immediately!
If you are going to bring this salad to a potluck or dinner party, add the dressing and mix at the very end so your salad doesn’t turn into watermelon soup.
