Three-Ingredient Broccoli Soup
Inspired by British chef Gordon Ramsey, this green soup is an Apothecai favorite. Simple to make and easy to dress up, it’s perfect for activating the energies of spring.
Rich in Vitamin C (think glowing skin, strong nails, and thick hair), folate (necessary for the production of new cells), and fiber (happy bathroom mornings), broccoli is an all-star veg.
Make a big batch and enjoy all week.
INGREDIENTS
• 1 large or two medium heads of broccoli, broken into florets
• 1 gallon water
• Coconut oil
• Salt and ground black pepper to taste
Optional garnish (highly recommended):
• Goat Cheese
• Walnuts
MAKE IT
Bring water to boil in a large stock pot, add salt as it boils.
Add broccoli and boil rapidly until you can pierce the stem with a knife with minimal effort.
Remove broccoli from pot with a slotted spoon, keeping the water.*
Put broccoli into a blender, and pour in water up to half way. Add another pinch of salt.
Pulse the blender several times, then puree for a few seconds.
Add the slices of goats cheese and walnuts to the bottom of a shallow bowl.
Pour soup on top. Drizzle with coconut oil, garnish with pepper and serve.
*Keep the broccoli water as a stock for other soups!
